A comforting and easy Crock Pot Cheddar Chili Mac perfect for busy weeknights, blending cheesy pasta and hearty chili for a satisfying family meal.

Ingredients

Scale
  • 1 pound ground beef
  • 1 onion, diced
  • 2 cans (15 oz each) chili (with or without beans)
  • 2 cups elbow macaroni
  • 4 cups beef broth
  • 2 cups shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef and onion over medium heat in a skillet. Drain any excess fat.
  2. Transfer the beef and onion mixture to the crock pot.
  3. Add the two cans of chili and beef broth to the pot.
  4. Stir in the elbow macaroni, ensuring it’s well distributed.
  5. Cover and cook on low for 180 to 240 minutes, or until the pasta is tender.
  6. Stir in the shredded cheddar cheese about 30 minutes before serving. Let it melt and combine.
  7. Season with salt and pepper to taste.

Notes

For a spicier kick, add diced jalapeños to the beef while cooking. Substitute the ground beef with ground turkey or a meat alternative for a healthier option. Stir in a little cream cheese before serving for a creamier texture.
