Ingredients

Scale
  • 2 pounds baby potatoes, halved
  • 1 pound kielbasa, sliced
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 can cream of chicken soup
  • 1 onion, chopped
  • Salt and pepper to taste
  • Optional: green onions for garnish

Instructions

  1. Add the halved baby potatoes, sliced kielbasa, and chopped onion to a crockpot.
  2. Season with salt and pepper.
  3. Mix the sour cream and cream of chicken soup until smooth in a separate bowl.
  4. Pour the sour cream mixture over the potatoes and kielbasa.
  5. Stir gently to coat the potatoes.
  6. Cover and cook on low for 360-480 minutes or on high for 180-240 minutes, until the potatoes are tender.
  7. Sprinkle the shredded cheddar cheese over the top about 30 minutes before serving.
  8. Cover again and let the cheese melt.
  9. Garnish with chopped green onions if desired.

Notes

Cut the baby potatoes into similar-sized halves for even cooking. Add cheddar cheese 30 minutes before serving for best results.
