An easy dump-and-go slow cooker dinner with beef smokies, baby gold potatoes, green beans and cabbage in buttery Cajun juices.

Ingredients

Scale
  • 1 lb baby gold potatoes, halved (about 16 halves)
  • 16 beef cocktail smokies (about 6 oz)
  • 3/4 lb fresh green beans, trimmed and snapped into 1 1/2 inch pieces
  • 1/4 head green cabbage, cut into 8 big wedges
  • 4 tbsp butter, cut into 4 chunks
  • 1 1/2 tbsp Cajun seasoning

Instructions

  1. Halve the potatoes, trim and snap the green beans, and cut the cabbage into 8 big wedges.
  2. Add the potatoes to a 6-quart slow cooker, then the smokies, then the green beans.
  3. Lay the cabbage wedges on top, set the butter chunks over the cabbage and sprinkle the Cajun seasoning over everything.
  4. Cover and cook on LOW for 7 to 8 hours or on HIGH for about 4 hours, until the potatoes are tender and the cabbage is soft.
  5. Stir gently once and spoon the buttery juices over the top. Serve hot.

Notes

  • Cajun seasoning already has salt, so taste the juices before adding any more.
  • If your slow cooker runs hot and looks dry after the first hour, add 1/4 cup water.
  • Leftovers keep in the fridge for up to 4 days.
