A hands-off slow cooker meal featuring chicken, rice, and mixed vegetables, flavored with soy sauce and garlic.

Ingredients

Scale
  • 2 cups white rice
  • 1 lb chicken breast, diced
  • 2 cups mixed vegetables (carrots, peas, bell peppers)
  • 1/4 cup soy sauce
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 2 tablespoons sesame oil
  • Salt and pepper to taste
  • Green onions for garnish (optional)

Instructions

  1. Add the diced chicken, white rice, mixed vegetables, soy sauce, minced garlic, chicken broth, and sesame oil to a large crockpot.
  2. Stir everything together until well combined.
  3. Season with salt and pepper to taste.
  4. Cover and cook on low for 240-360 minutes, or until the rice is tender and the chicken is cooked through.
  5. Serve hot and garnish with green onions if desired.

Notes

For best results, use diced chicken of uniform size for even cooking. Adjust salt seasoning after cooking as soy sauce adds saltiness.
